Tiki Tings | Recipes: Tiki Popsicles

We’ve been holding on to this #TikiTings since Christmas…TIKI POP MOLDS! Huge thanks to Lisa for getting us this great gift. If you want to get your hands on your own, you can get them from Sur La Table. The set comes with four silicone molds, all with a unique Tiki head design. It also comes with a tray that properly holds them up while freezing, making set up really easy! The hardest part was deciding what flavors to fill them with.

There are a ton of fruit pop recipes out there, but we really wanted to put our spin on things. After a bit of experimenting we decided use a special ingredient - our favorite Trader Vics Macadamia Nut Liqueur . We like to add a splash of it to all our drinks, so why not our desserts? It really helps bring the sweet and savory flavors of the chopped roasted macadamia nuts.

Alright, here’s quick and easy recipe to make Coconut Pineapple Macadamia Popsicle perfect for anyone with tropical tastebuds.

Here’s what you’ll need

1 can coconut milk

1 cup fresh pineapple (frozen overnight)

1/2 cup greek yogurt

1/2 Trader Vic’s Macadamia Nut Liqueur

1/2 cup macadamia nuts (roasted and finely chopped)

1 tbsp vanilla extract

Orange zest & sugar to taste

Add all ingredients in to a blender. Blend on high until well mixed.

Next, pour the mixture in to the molds, insert the handles (tiki or bamboo side), and stick them in the freezer for at least 6 hours.

The flavors came out very light and bright, which was great because we didn’t want anything too sugary. It did take a few tries to balance the flavors of it all. If you don’t love the taste of greek yogurt, you may want to swap it for a different type of yogurt flavor.
