Raise your glasses if you’re excited for this 80 degree weather we’re having! Now that it’s finally starting to feel like summer, we’re going full on tropical with this recipe!
The Lapu Lapu is a simple, refreshing drink that is perfect for those afternoons by the pool. (Not that we have a pool, but we know people who do! Expect us to be over).
As with most Tiki drinks, there is a lot of history and secrecy behind it’s origins. When we decide on a drink we want to make, we always like to do our research on the best ways to make it and where it originated. One of our favorite youtube channels right now is Distinguished Spirits. Not only do they do craft cocktails, but a ton of Tiki drinks as well. What we like best is how in depth they get with the history behind these drinks. You can check out their video on the Lapu Lapu here.
With origins reaching as far back as the 1940’s, there are a couple different ways you can serve this drink , but we wanted to stay true to Disney's Polynesian Village Resort style, so we made this Lapu Lapu and served it in a pineapple. We like when we can incorporate a little creative element to these recipes trials. Best part is we won’t have to do dishes afterwards!
Here’s what you’ll need
2oz Dark Rum
1oz Pineapple Juice
2oz Fresh Orange Juice
3tsp Fresh Lime Juice
3tsp Fresh Lemon Juice
3tsp Sugar Syrup
3tsp 151 Proof Rum
1 Fresh Pineapple for serving
Combine the dark rum, fruit juices, sugar syrup, and ice in a shaker and shake away. Strain in to your cored pineapple with fresh crushed ice. Finally top it off with that 151 Proof Rum for an extra kick.
It’s a fun one, right? Probably not something you want to serve at a larger cocktail party, but definitely a showstopper. If you’re a Tiki enthusiast, you have to make at least once. We recommend getting one of these pineapple corers to make things a whole lot easier as well as the recipe book we’ve been testing a lot of recipes from.
